textA bitter taste compound (tastant) binds a bitter taste receptor (TAS2R) (Meyerhof et al. 2010, Thalmann et al. 2013). The binding causes a conformational change in the TAS2R that is transmitted to an associated heterotrimeric G protein complex comprising GNAT3 (gustducin), GNB1 or GNB3, and GNG13. Particular TAS2Rs, such as TAS2R1, bind particular sets of bitter tastants (Meyerhof et al. 2010).
