textIn the stomach, PGA5 (pepsin A-5) hydrolyzes peptide bonds in dietary proteins. The enzyme is an aspartic-type endopeptidase with broad substrate specificity but a preference for bonds between hydrophobic amino acids, notably phenylalanine and leucine (Athuada et al. 1989; Dunn et al. 1986; Fruton 1976).
